Cacao Crunch Granola Cheesecake with Caramel Sauce

Rani said “I love choc mint but could not find a brand that is not packed with sugar! I made my own using Bliss Fit Granola – Spirulina Peppermint Activated and Raw granola. It’s not a drill! It tastes exactly like peppermint crisp! It’s so easy to make too!

Cake BASE:

1 Cup Raw Nuts

2 Tbsp. Nut Butter

2 Tbsp. Melted Coconut Oil

1-2 Tbsp. Cacao Powder

1-2 Tbsp. Rice Malt Syrup (optional)

Cheesecake FILLING:

1 1/2 Cups Raw Soaked Cashews

1/3 Cup Coconut Oil

1/2 Cup Coconut Cream

1/2 Cup Rice Malt Syrup

1-2 Tbsp. Cacao Powder

Caramel Sauce:

2 Tbsp. Rice Malt Syrup

2 Tbsp. Nut Butter or Tahini

2 Tbsp. Coconut Cream/Milk (vegan option) or 20g Butter

INSTRUCTIONS:

Blitz all BASE ingredients together to form a meal and press into silicon moulds and freeze whilst making the filling.

Blitz all Cheese Cake FILLING ingredients until smooth and silky, pour on top of bases and sprinkle Bliss Fit Granola – Cacao Crunch with Cinnamon Granola on top. Freeze overnight and take out 5-10 mins before drizzling with sauce and serving.

For the Caramel Sauce: melt all ingredients for caramel sauce together in a double boiler until blended and smooth, pour over cheesecake and serve with roasted hazelnuts.

Cake Base
  1. Blitz all BASE ingredients together to form a meal
  2. Press equal amounts into silicon moulds
  3. Freeze whilst making the filling
Cheesecake Filling
  1. Blitz all Cheese Cake FILLING ingredients until smooth and silky
  2. Pour the filling on top of bases
  3. Sprinkle Bliss Fit Granola – Cacao Crunch with Cinnamon Granola on top
  4. Freeze overnight and take out 5-10 mins before drizzling with sauce and serving
Caramel Sauce
  1. Melt all ingredients for caramel sauce together in a double boiler until blended and smooth
  2. Pour over cheesecake and serve with roasted hazelnuts
